Turkey Stuffed Marrow

As you know we have been away on holiday and wanted to shift our holiday gains before our next weigh ins. With this in mind I have been searching for recipes packed with speed foods and super free foods. Ignore the low score it got from Luke he doesn’t like marrow or courgette (not keen on the texture) it was a tasty meal that didn’t feel like it was missing anything although it was completely carb free. Turkey Stuffed Marrow

  • 1 large marrow
  • lean turkey mince
  • 1 large onion chopped
  • 2 carrots grated
  • 2 celery sticks finely chopped
  • 1 tin tomatoes
  • 1 pepper diced
  • garlic powder
  • chili flakes
  • Italian herbs
  1. fry in fry light the onion and pepper until soft
  2. add the mince and fry until completely sealed
  3. add the celery and carrot, cook for 3 minutes
  4. add the tin tomatoes and herbs (pinch of chili flakes 1 tbsp of the rest)
  5. season to your taste with salt and pepper
  6. cut the marrow into 4 cm deep discs and remove the seedy middle bit
  7. place the marrow rings in an oven dish and fill the gaps with the mince mixture
  8. cook in the oven at 180 degrees C for 30 minutes
  9. enjoy.

Top Tip: You could always use your HEX A and B to make a breadcrumb and cheese topping to sprinkle on before they go into the oven.
