Spag Bol. Warm, tasty, comforting, family food. I love it. Granted this version is semi labour intensive but it’s packed full of super free veg, speed foods and is 1000 times healthier than its lazy counterpart ( sauce from a jar, premium mince, pasta, cheese).

Skinny Veggie Spaghetti Bolognese
– a handful of quorn mince
– grated, carrot, celery, parsnip and courgette
– chopped onion
– diced carrot and swede
– diced pepper
– tin sweet corn
– tin tomatoes
– garlic, oregano, salt pepper, Worcestershire sauce, pinch of cinnamon
In a frying pan that’s been sprayed with fry light cook the onions, garlic and peppers, once soft add the grated veg and cook. This makes the sauce lovely and sweet. Boil or steam the diced carrot and swede and once cooked drain and add to frying pan. And the rest of the ingredients and simmer for 15 minutes. Now you can leave it there but if you want something extra special get up and do this bit before work then dump the mix in your slow cooker and leave on a medium heat all day. It’s worth it I promise. Serve on whole wheat spaghetti and top with cheese if you haven’t used your a option!

~ there’s so much super free in this meal that you can use it as a success express meal, just watch how much pasta you have with it.
